Ingredients - 1 small head chopped and de-stemmed kale, blanched (aka quickly dipped in boiling water) 1/2 cup walnuts 1/2 tablespoon nutritional yeast, or to taste 1-2 dates, or to taste (this adds a sweetness that I find really rounds out the taste of the pesto!) zest of 1/2 lemon juice of 1 lemon 2 small cloves of garlic, minced 1/4 cup-1/2 cup olive oil salt and pepper, to taste Directions - In a food processor (or blender), pulse together the kale, walnuts, garlic, lemon juice, zest and salt and pepper. Slowly stream in olive oil until desired consistency is reached. Stir pesto into prepared pasta. I served this pasta with greens sautéed with garlic and pepper and topped it with red pepper flakes and more lemon zest!</image:caption>

Add veggies and broth or water and bring to a boil. Lower heat and simmer for 30-45 minutes depending on your vegetable crunch preference (I added the broccoli and cabbage towards the very end to keep them fresh and bright.)       <image:caption>A matcha made in heaven for any green tea-lover ;) Ingredients - For cookies: 2 cups Bob’s Red Mill Paleo Flour OR almond flour (if using almond flour, the cookies will turn out a bit different, but still good!) 1/2 tablespoon matcha 1/4 cup + 1 tablespoon coconut oil, softened 1/3 cup honey or maple syrup 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract 1/4 teaspoon pink salt For jam (you could also just use store bought, but why not make your own you’re going to be in the kitchen anyway!): 1 cup raspberries juice from 1/2 a lemon 1 tablespoon chia seeds Directions - Preheat your oven to 350° Fahrenheit. Line a cookie tray with parchment or a non-stick baking mat. Prepare the jam first so it’s ready by the time your cookies are ready to be filled. In a small saucepan on medium-high heat, warm raspberries. As they warm they will be easy to mash with a whisk or spoon. Add lemon juice. Once the raspberries cook down a bit (I like to keep some chunks in my jam), take off heat and add chia seeds. Stir to combine and allow to sit. The jam will congeal pretty quick! In a large bowl, whisk together coconut oil, honey, and vanilla + almond extracts until the consistency is fluffy and caramel-like. Sift flour into the bowl and gently fold to combine. Add matcha and salt. The dough should be firm and not too sticky. If it is sticky and hard to shape, I recommend adding more flour. Roll dough into small balls. Place on baking sheet and, using your finger or thumb, make a circular indent in the center of each cookie. (I like my cookies pretty small and round, but you could flatten them out a bit before making the indent if you like.) Fill cookies with jam. I used 1/4 teaspoon of jam for each cookie. Bake cookies for 10-15 minutes. (I baked mine for 11 minutes and they were slightly golden around the edges!) Allow cookies to cool for at least 5 minutes before enjoying.</image:caption>

      <image:title>Home - Chickpea Frittata - Spring Chickpea Frittata</image:title>
      <image:caption>You FRITTATA be kidding me! Ingredients - 1 &amp; 3/4 cups garbanzo flour 1 &amp; 3/4 cup water 1/4 cup full-fat coconut milk 3 tablespoons nutritional yeast 1 teaspoon “Italian seasoning” (or dried thyme, rosemary, oregano, whatever you have!) 1/2 teaspoon turmeric powder 1 teaspoon Himalayan pink salt (or to taste) 1 shallot, minced or finely shaved 2 tablespoons avocado or olive oil 1/2 cup fresh herbs (I used cilantro flowers that I received in my produce delivery. You could use parsley, basil, or a combo of both!) 2-3 cups vegetables and greens, chopped (I used carrots, zucchini, and spigariello. You could use thawed frozen peas, sun-dried tomatoes, broccoli, etc.) Directions - Preheat your oven to 375° Fahrenheit. Grease a skillet, pie dish, cake pan, loaf tin, whatever you got! Whisk together flour, nutritional yeast, water, milk, oil, and dry seasonings in a large bowl. Your batter will be quite wet, but all is well! Add in the fresh herbs and shallot, and then the chopped vegetables of your choosing. Bake your dreamy, Spring Frittata for 45-50 minutes. It should have a light spring back when finished and be mildly browned on the top and edges. Test the “doneness” of your frittata by inserting a fork or chopstick through the center — when it’s ready, the utensil will come out clean! Allow to cool for 5-10 minutes. Slice into pie-like segments and serve with olive oil and flaky salt.</image:caption>

Salad Ingredients - 2 heads baby lettuce 1 bunch spigariello, broccoli rabe, mustard greens (or really any other bitter green you can find!) 4 red beets, quartered 4 small orange carrots, chopped on a bias 1 small bunch breakfast radish, halved 2 tablespoons coconut oil, melted 1/2 tablespoon lemon or orange zest 1/2 teaspoon Himalayan pink salt 1/2 teaspoon black pepper 1/4 teaspoon smoked paprika Dressing Ingredients - 1/2 cup pumpkin seeds, soaked overnight in the fridge or quick-soaked in hot water for 30 minutes, and then rinsed and drained 1/2 cup cilantro flowers, loosely packed (alternatively you could use 1/4 cup cilantro) 1/4 cup water 1/4 cup extra virgin olive oil 2 tablespoons lemon juice 1/2 tablespoon lemon zest 1/2 small shallot, roughly minced salt and pepper, to taste ***Optional: small pinch spirulina powder for color and added vitamins and minerals Directions - Preheat oven to 425 degrees Fahrenheit. After preparing root vegetables, toss in coconut oil, zest, salt, pepper and paprika. Place beets, carrots, and radishes onto a nonstick mat or greased baking sheet. Bake for 25-30 minutes or until vegetables are tender but maintain firmness in the center without falling apart. While your root vegetables are baking, prep the salad greens and the dressing. In a blender or a food processor, combine pumpkin seeds, lemon juice, water, zest, shallot, and seasoning. Slowly stream in olive oil. Allow root vegetables to cool completely before serving. Roughly assemble salad and drizzle with the dressing and a touch of olive oil.</image:caption>

Ingredients - 1/4 yellow onion, diced 3 garlic cloves, minced 2 tablepoons olive oil, avocado oil, or vegetable broth (preferably avocado oil as it has a high smoke point) 1 package tempeh, crumbled by hand 2 carrots, chopped very small 2 stalks celery, chopped very small 1 teaspoon Italian Seasoning (or a combo of parsley, basil, and oregano) 1 can whole roasted tomatoes 1/2 can of tomato paste 1/4 cup pasta water 2 tablespoons balsamic vinegar or red wine 1/2 teaspoon pink salt, or to taste Directions - Get your ducks in a row…aka get organized…AKA MISE EN PLACE, honey! Chop, dice, and prepare your ingredients. On medium heat, in a medium sauce pan, sautée garlic and onions with dried spices and oil or broth until onions are translucent and fragrant. Add tempeh, celery and carrot to the pan and let the tempeh start to brown before adding the canned tomatoes, tomato paste, and wine or balsamic. Stir together, bring to a simmer, and cover with a lid. Either before or while your sauce is gearing up, prepare the pasta. You will utilize the pasta water for additional thickness in your sauce. While the sauce is simmering, add the pasta water. Let simmer for about 15 minutes, although you can simmer it for as long as your heart desires to pull out those juices and flavors! Enjoy over pasta and top with cashew cheese, regular cheese, or no cheese! Whatever suits your fancy.</image:caption>
